The Ironroot Republic distillery was founded in 2013 in Dension, Texas. 95 per cent of the grain used comes from a distance of less than 60 miles. The whiskeys are double distilled and matured using the French elevage technique, which is typically employed for ageing Cognac and Armagnac.
Texas Legation smells of vanilla, butter and sweet corn. On the palate, there are more fruity notes but also hints of chocolate and cinnamon. The finish of the whiskey is distinctly spicy with notes of pepper, balanced with toffee and brown sugar.
