Bodegas Tradición is dedicated to the ageing of very old sherries that receive the highest quality certification: VOS and VORS. Processes that have been guarded for generations have been revived for this, namely soleras and criaderas, in which older wines are repeatedly married with younger ones in order to preserve character and freshness.
